A healthier take on a popular summer sidedish: Crisp lime vinaigrette coleslaw

Traditional summer barbecues and picnics often feature a popular crunchy side dish: coleslaw. Among its nutritional benefits are fiber, vitamin C and vitamin K. As with many foods, however, how healthy coleslaw is depends largely on how you prepare it.

In traditional barbecue culture, cooks typically make coleslaw with mayonnaise. In her recipe, Gemma Aguayo-Murphy, the creator of Everyday Latina — a blog that celebrates healthy and traditional Mexican recipes —, uses a lime vinaigrette. Aguayo-Murphy loves emphasizing the healthy qualities of coleslaw, turning it into the perfect side dish for everyone who is enjoying the last days of summer.

‘‘Coleslaw is a staple at many family cookouts, and while I still enjoy the traditional creamy version I grew up with, this lighter take has become one of my favorites,’’ Gemma said.

Her lime-accented coleslaw lets the fresh vegetables shine.

Healthy eating begins with thoughtful ingredient choices all year long. During the warmer months, fresh, seasonal, water-rich produce takes center stage, providing nutrients while helping the body stay hydrated. Those ingredients are at the heart of Gemma’s delicious slaw.

‘‘I especially love this recipe during the summer because it feels light and refreshing on hot days,’’ she said.

This recipe features wholesome ingredients such as cabbage, carrots, radishes, green onion, cilantro, and an optional jalapeño for an extra kick.

“This colorful slaw is packed with nutrients, fiber, and plenty of crunchy texture,” she said. ‘‘Cabbage and carrots provide vitamins A and C, while radishes add freshness and antioxidants.’’

To prepare this healthy homemade salad dressing you will need fresh lime juice, extra virgin olive oil, red wine vinegar, and garlic.

‘‘These ingredients create a bright and tangy flavor without the heaviness of a creamy dressing,’’ she said.

This recipe is ideal for picnics and summer cookouts. It also complements a variety of dishes, from grilled chicken and carne asada to seafood, tacos, and burgers.

‘‘This side dish is simple, flavorful, and made with ingredients that leave you feeling energized rather than weighed down.’’

Crisp lime vinaigrette coleslaw

Ingredients:

Coleslaw

  • 4 cups shredded cabbage (green, purple, or a combination)
  • 3 cups shredded carrots
  • 1 cup shredded or thinly sliced radishes
  • ⅓ cup sliced green onions
  • ¾ cup chopped cilantro
  • 2 jalapeños, thinly sliced (optional)

Lime vinaigrette

  • Juice of 2 to 3 limes (about ¼ cup)
  • 3 tablespoons red wine vinegar or apple cider vinegar
  • 4 tablespoons extra virgin olive oil
  • 1 garlic clove, finely minced or grated
  • ½ teaspoon salt
  • ¼ teaspoon black pepper (optional)

Preparation:

Combine the cabbage, carrots, radishes, green onions, cilantro, and jalapeños in a large bowl.

In a small bowl or jar, whisk together the lime juice, vinegar, olive oil, garlic, salt, and pepper until well combined.

Pour the vinaigrette over the vegetables and toss until everything is evenly coated.

Cover and refrigerate for at least 30 minutes to allow the flavors to come together.

Toss once more before serving, and if you want to adjust the seasoning, just add salt and pepper.
