Por esta raz\u00f3n, elegir alimentos nutritivos, de f\u00e1cil digesti\u00f3n y refrescantes resulta fundamental.<\/p>\n<p>\u201cEsta ensalada de pollo mexicana es un plato fresco y nutritivo, perfecto para los d\u00edas m\u00e1s calurosos. Combina pollo deshebrado, sustanciosas papas y zanahorias, apio crujiente, manzanas dulces y nueces tostadas, creando una mezcla satisfactoria de sabores y texturas\u201d, coment\u00f3 Gemma Aguayo-Murphy, experta en cocina tradicional mexicana con un enfoque en ingredientes saludables.<\/p>\n<p>Como ocurre en la mayor\u00eda de las recetas mexicanas, los chiles jalape\u00f1os son ingredientes esenciales, y esta receta no es la excepci\u00f3n. Ella recomienda utilizar mayonesa elaborada con aceite de aguacate, una opci\u00f3n que contiene menos calor\u00edas que la mayonesa tradicional y sustituye los aceites vegetales procesados por aceite de aguacate, un fruto que aporta grasas saludables.<\/p>\n<p>\u201cPara mantener la ensalada ligera, me gusta usar mayonesa con aceite de aguacate, la cual est\u00e1 hecha con grasas m\u00e1s saludables y posee un sabor limpio y suave que armoniza a la perfecci\u00f3n con esta ensalada. Es una opci\u00f3n ideal, especialmente en esta \u00e9poca del a\u00f1o, cuando buscamos comidas que puedan prepararse con antelaci\u00f3n y servirse fr\u00edas, ya sea para almuerzos, picnics o reuniones familiares\u201d.<\/p>\n<p>La chef hered\u00f3 esta receta de su madre, quien sol\u00eda preparar este plato durante los calurosos d\u00edas de verano.<\/p>\n<p>\u201cEsta es la versi\u00f3n con la que crec\u00ed, tal como mi madre la preparaba siempre, y la misma que sigo preparando hoy para mi propia familia. An\u00edmese a prepararla para su propia familia.<\/p>\n<h2><strong>Ensalada de pollo mexicana<\/strong><\/h2>\n<h3><strong>Ingredientes:<\/strong><\/h3>\n<p>3 a 4 tazas de pollo cocido y desmenuzado (o pollo asado)<br \/>\n1 papa grande (variedad Russet)<br \/>\n3 zanahorias<br \/>\n1 tallo de apio, cortado en cubitos<br \/>\n1 manzana pelada y cortada en cubitos<br \/>\n\u00bc de taza de nueces pecanas o almendras picadas<br \/>\n\u00bd taza de mayonesa de aceite de aguacate (m\u00e1s cantidad adicional al gusto)<br \/>\n2 cucharadas del jugo de los chiles jalape\u00f1os encurtidos<br \/>\nSal y pimienta al gusto<br \/>\nChiles jalape\u00f1os encurtidos (opcional)<\/p>\n<h3><strong>Preparaci\u00f3n:<\/strong><\/h3>\n<p>Pele las zanahorias y las papas, y luego c\u00f3rtelas por la mitad. Col\u00f3quelas en una olla y c\u00fabralas con agua. Lleve a ebullici\u00f3n y cocine durante unos 10 minutos, luego verifique el punto de cocci\u00f3n pinchando con un tenedor.<\/p>\n<p>Las verduras deben quedar ligeramente tiernas, pero conservando a\u00fan un toque crujiente.
