Foto de Bill St. John para UCHealth.<\/figcaption><\/figure>\n<p>Uno de los platos m\u00e1s simples de la cocina india, tan sencillo que su principal prop\u00f3sito en India es calmar a los beb\u00e9s y personas enfermas, se ha esparcido por el mundo bajo diversos nombres.<\/p>\n<p>En Occidente, solemos llamarlo kitchari o katchari. En Inglaterra, dio origen a la preparaci\u00f3n de arroz y pescado conocida como kedgeree. Una de las formas romanizadas de su nombre en Urdu es khichri. Un libro de cocina india en mi biblioteca lo designa como khichdi, que es el t\u00e9rmino que utilizo aqu\u00ed. (Cualquiera que sea su ortograf\u00eda, este t\u00e9rmino en hindi o bengal\u00ed significa \u201cmezcla\u201d, generalmente de dos granos).<\/p>\n<p>En su esencia, una receta de khichdi consiste en una mezcla 50\/50 de arroz basmati y alg\u00fan tipo de legumbre (cualquier lenteja, frijol chino, garbanzos, gandul o una combinaci\u00f3n de estos). Con solo un toque m\u00ednimo de especias, eso ya se considera khichdi. Sin embargo, muchas recetas de khichdi a\u00f1aden una buena cantidad de especias indias y como sugiere nuestra receta, a menudo incluyen ingredientes adicionales como verduras.<\/p>\n<p>La simplicidad fundamental del khichdi se alinea con los sistemas naturales de medicina que se practican en India, especialmente el Ayurveda (del s\u00e1nscrito \u201cayur\u201d y \u201cveda\u201d, que significan \u201cvida\u201d y \u201cciencia\u201d o en su contexto, \u201cconocimiento\u201d).<\/p>\n<p>De este modo, el khichdi es el punto de partida de cada r\u00e9gimen o limpieza ayurv\u00e9dica y resulta ser un inicio adecuado para el a\u00f1o nuevo en nuestras cocinas occidentales.<\/p>\n<p>Es una pena que entendamos \u201climpieza\u201d de forma tan literal, como si fuera un desatascador alimentario para nuestro sistema digestivo de arriba abajo. El khichdi es m\u00e1s mono-nutritivo, por as\u00ed decirlo, enfocado y le da a nuestro sistema digestivo un merecido descanso tras dos meses de comer y beber en las festividades.<\/p>\n<p>\u201cDesde un nivel celular\u201d, dice Peter Crawford, masajista licenciado y terapeuta hol\u00edstico de salud y bienestar durante m\u00e1s de 30 a\u00f1os, \u201clas c\u00e9lulas de nuestro cuerpo son como bater\u00edas, con cargas positivas y negativas\u201d.<\/p>\n<p>\u00c9l explica que \u201cel n\u00facleo de la c\u00e9lula\u201d y enfatiza que esto abarca todas las c\u00e9lulas del cuerpo, no solo las gastrointestinales, tiene una carga \u00e1cida, mientras que el citoplasma (todo lo que rodea al n\u00facleo) tiene una carga b\u00e1sica.<\/p>\n<p>\u201cCuanto m\u00e1s logremos equilibrar el citoplasma con el n\u00facleo\u201d, afirma, \u201cmejor podr\u00e1 la \u2018bater\u00eda\u2019 recargar su vitalidad\u201d.<\/p>\n<p>En general, nosotros en Occidente hemos alterado ese equilibrio durante dos (o m\u00e1s) meses, comiendo y bebiendo de la manera en que lo hacemos, consumiendo grandes cantidades de dulces, grasas, alcohol y todos los dem\u00e1s alimentos festivos que nos gustan. Deliciosos, pero al final desagradables, en el sentido de que alteran seriamente el equilibrio entre los n\u00facleos cargados de \u00e1cido de nuestras c\u00e9lulas al estimular los citoplasmas cargados de base que los rodean.<\/p>\n<p>Durante siglos, los indios, tal vez sin conocer los detalles de esta ciencia, pero claramente atentos al funcionamiento de sus cuerpos, desarrollaron la cocina y el consumo de alimentos como el khichdi, que act\u00faa como un calmante y un reequilibrador. \u201cAyuda al cuerpo a recargar su vitalidad\u201d, afirma Crawford.<\/p>\n<p>El khichdi es un alimento f\u00e1cil de digerir (el arroz y las legumbres se cocinan justo antes de volverse pur\u00e9). De todas formas, \u00a1Feliz A\u00f1o Nuevo!<\/p>\n<h2><strong>Receta de Khichdi<\/strong><\/h2>\n<p>Basado en recetas de feedmephoebe.com, veganricha.com y marthastewart.com, as\u00ed como de Priya Krishna en &#8216;Indian-ish&#8217; (Harvest, 2019). Sirve de 6 a 8 personas y se puede multiplicar o reducir f\u00e1cilmente.<\/p>\n<h3><strong>Ingredientes<\/strong><\/h3>\n<p>1 taza de arroz basmati<\/p>\n<p>1 taza de legumbres (cualquier lenteja, frijol chino, garbanzo, gandul o una combinaci\u00f3n)<\/p>\n<p>2 cucharadas de ghee o aceite vegetal<\/p>\n<p>1\/2 cucharadita de semillas de mostaza amarilla<\/p>\n<p>1\/2 cucharadita de semillas de comino<\/p>\n<p>2 cucharaditas de polvo de coriandro (cilantro)<\/p>\n<p>1 cucharadita de comino molido<\/p>\n<p>1 1\/2 cucharaditas de c\u00farcuma en polvo<\/p>\n<p>2 ramitas peque\u00f1as de canela<\/p>\n<p>5 c\u00e1psulas de cardamomo verde<\/p>\n<p>1 cucharada de jengibre fresco picado<\/p>\n<p>1 cucharadita de sal<\/p>\n<p>6 (o m\u00e1s) tazas de caldo de verduras o agua<\/p>\n<p>4 tazas de verduras variadas (ejotes, papas, zanahoria, br\u00f3coli, repollo chino (bok choy), calabacitas, o cualquier combinaci\u00f3n, todas cortadas en trozos del tama\u00f1o de un bocado)<\/p>\n<p>3 tazas sueltas de hojas de espinaca<\/p>\n<p>Cilantro para decorar<\/p>\n<h3><strong>Instrucciones<\/strong><\/h3>\n<p>Combinar el arroz y las legumbres, y enjuagarlos en varias ocasiones con agua fr\u00eda, de 5 a 6 veces, moviendo con los dedos y frotando los granos entre s\u00ed, hasta que el agua salga clara. Escurrir y reservar.<\/p>\n<p>A\u00f1adir el ghee o el aceite a una olla grande de fondo grueso o a una cazuela, a fuego medio-alto, agregar las semillas de mostaza y comino, revolviendo. Cuando las semillas de mostaza comiencen a reventar (alrededor de 20-30 segundos), a\u00f1adir los polvos de coriandro (cilantro), comino y c\u00farcuma y remover durante otros 20 segundos. Agregar las ramitas de canela, las c\u00e1psulas de cardamomo y el jengibre, revolviendo una vez m\u00e1s. No dejar que las especias o los polvos se quemen, simplemente fre\u00edrlos lo suficiente para que suelten su aroma, de lo contrario el khichdi se volver\u00e1 amargo.<\/p>\n<p>En la olla, a\u00f1adir la sal, el arroz, las legumbres y el l\u00edquido. Llevar a ebullici\u00f3n, removiendo una o dos veces, luego reducir el fuego a fuego lento y cocinar, con la tapa de la olla apenas entreabierta, durante 45 minutos a 1 hora, hasta que las legumbres y el arroz est\u00e9n tiernos.
