Muy f\u00e1cil. Lo mismo con mi batidora de mano (Smart Stick). Por ejemplo, en 1980, en un trabajo de ni\u00f1era, la madre me dijo que &#8220;17 minutos&#8221; en el Amana Touchmatic Radarange cocinar\u00eda los muslos de pollo por completo. &#8220;S\u00ed,&#8221; pens\u00e9 para m\u00ed misma, &#8220;claro que s\u00ed&#8221;.<\/p>\n<p>Despu\u00e9s de que se fue, configur\u00e9 el bot\u00f3n de Alta Potencia durante 70 (s\u00ed, setenta) minutos porque, obviamente, ese era el n\u00famero que ella quer\u00eda decir, no &#8220;17&#8221;. Hacia el final de la explosi\u00f3n, los huesos del pollo se ennegrecieron de adentro hacia afuera y explotaron.<\/p>\n<p>Para una Navidad reciente, mi hijo, Colin, y su mam\u00e1 me regalaron una olla instant\u00e1nea (Instant Pot). \u201cInstant\u00e1neo, mis frijoles,\u201d dije. No para m\u00ed. Tal vez recibiste una olla instant\u00e1nea durante las festividades de esta temporada y te has estado diciendo lo mismo a ti.<\/p>\n<p>Esa ma\u00f1ana de Navidad, mir\u00e9 este peque\u00f1o R2-D2 con un enchufe y lo guard\u00e9. No pod\u00eda creer que esta cosa pudiera superar a la vieja olla de cocci\u00f3n lenta (Crock Pot).<\/p>\n<p>Me equivoqu\u00e9. Tan equivocado.<\/p>\n<p>Colin hizo un hombro de cerdo desmenuzado con su Instant Pot, en una hora y media, que en todos los aspectos, especialmente en la ternura, se comparaba con una cocci\u00f3n lenta de seis horas. Ahora he hecho arroz jazm\u00edn, basmati y Louisiana Long con la funci\u00f3n de olla a presi\u00f3n de la Instant Pot y los tres son mucho mejores, y mucho menos estresantes, hechos de una mejor manera que cualquier cosa que haya hecho con arroz crudo en la estufa o en el horno.<\/p>\n<p>Y yogurt, no me hagas empezar a elogiar el yogurt de Instant Pot. Llorar\u00e9. Adoro el yogurt y como al menos una o dos tazas al d\u00eda. La Instant Pot me permite hacer un gal\u00f3n a la vez. Su gran ventaja, en esta \u00e1rea de las artes l\u00e1cticas, es c\u00f3mo mantiene una temperatura de incubaci\u00f3n perfecta de exactamente 110 grados Fahrenheit durante todo el tiempo que desees. (Yo hago 12 horas toda la noche).<\/p>\n<p>El padre de Colin ya no usa su vieja olla de cocci\u00f3n lenta. Y mant\u00e9n tu rostro alejado mientras giras la v\u00e1lvula.<\/li>\n<\/ul>\n<h2><strong>Yogurt Instant Pot <\/strong><\/h2>\n<p>Despu\u00e9s de hacer yogurt en la Instant Pot, puedes dar un paso adicional para convertirlo en &#8220;estilo griego&#8221;, si lo deseas. Tambi\u00e9n puedes hacer &#8220;labni&#8221; (a veces escrito como &#8220;labneh&#8221;), una especie de queso de yogurt popular en el Levant que se hace drenando el suero del yogurt durante m\u00e1s que unas pocas horas.<\/p>\n<p>Esta receta principal produce 1 gal\u00f3n de yogurt, o 2 cuartos de estilo griego, o menos de labni. En este m\u00e9todo, BSJ no utiliza la Instant Pot para calentar inicialmente la leche (y, en esta receta, la crema), sino la vieja estufa. Es m\u00e1s r\u00e1pido, menos desordenado y, para hacer yogurt, m\u00e1s seguro y confiable.<\/p>\n<h3><strong>Ingredientes<\/strong><\/h3>\n<p>1 gal\u00f3n de leche entera<\/p>\n<p>1 cuarto de mitad-mitad (half and half- mitad leche y mitad crema)<\/p>\n<p>3-4 cucharadas de yogurt natural con cultivos vivos activos (comprado en la tienda o de un lote casero anterior), en una taza o taz\u00f3n, a temperatura ambiente<\/p>\n<h3><strong>Instrucciones <\/strong><\/h3>\n<p>En la estufa, en una olla grande, calienta la leche y producto mitad-mitad a fuego medio-alto, revolviendo ocasionalmente, hasta que la temperatura alcance los 180 grados en un term\u00f3metro de lectura instant\u00e1nea en varios lugares del l\u00edquido caliente. Calienta la olla interna de la Instant Pot hasta la mitad con agua caliente del grifo para calentarla y ponla a un lado<\/p>\n<p>Enfr\u00eda la leche, ya sea fuera del fuego o en un ba\u00f1o de agua y hielo, hasta que la temperatura baje a 108 grados medida en un term\u00f3metro de lectura instant\u00e1nea en varios lugares del l\u00edquido caliente. Vac\u00eda y seca la olla interna y col\u00f3cala dentro de la Instant Pot. Templa r\u00e1pidamente las 2 cucharadas de yogurt con un poco de leche caliente y luego mezclarlas de nuevo con la leche caliente. Transfiere la leche y la mitad-mitad (half and half)\u00a0 a la Instant Pot, cierra la tapa, presiona el bot\u00f3n de Yogurt y ajusta el tiempo a tu gusto, desde 8 horas (yogurt ligeramente \u00e1cido) hasta 12 horas (yogurt apreciablemente \u00e1cido).<\/p>\n<p>Para hacer yogurt estilo griego: Coloca el yogurt terminado en un colador o tamiz, forrado con muselina enjuagada y exprimida o varias capas de gasa de queso de tejido abierto, colocado sobre un bol lo suficientemente grande como para recoger la mitad del volumen del suero del yogurt. La Instant Pot se convierte en una en este caso. Consulta las notas para cocinar otros tipos de arroz (por ejemplo, arroz basmati o arroz integral).<\/p>\n<h3><strong>Ingredientes<\/strong><\/h3>\n<p>1 cup raw jasmine rice<\/p>\n<p>1 taza de arroz jazm\u00edn crudo<\/p>\n<p>1 cup cool water<\/p>\n<p>1 taza de agua fr\u00eda<\/p>\n<p>1\/4 to 1\/2 teaspoon fine sea salt, to taste<\/p>\n<p>1\/4 a 1\/2 cucharadita de sal marina fina, al gusto.<\/p>\n<h3><strong>Instrucciones<\/strong><\/h3>\n<p>En un taz\u00f3n grande y bajo agua corriente, enjuaga el arroz, frotando los granos juntos bajo el agua con los dedos, dren\u00e1ndolo despu\u00e9s de cada vez (de manera similar a &#8220;paneo de oro&#8221;), hasta que el agua salga bastante clara, de 5 a 6 enjuagues.<\/p>\n<p>A\u00f1ade el arroz, el agua y la sal a la Instant Pot. Cierra la tapa, girando la perilla de ventilaci\u00f3n a la posici\u00f3n de &#8220;Sellado&#8221;.
