Photo by Getty Images.<\/figcaption><\/figure>\n<p>Nights under the stars and outdoor adventures during the day \u2013 \u2018tis the season of camping.<\/p>\n<p>With a <a href=\"https:\/\/campingcooks.com\/camping-tips-guides\/\" target=\"_blank\" rel=\"noopener noreferrer\">little preparation and creativity<\/a>, you can make sure your camping meals are not only easy and delicious, but also healthy.<\/p>\n<p>Cara Marrs, a registered dietitian nutritionist at <a href=\"https:\/\/www.uchealth.org\/locations\/uchealth-yampa-valley-medical-center\/\" target=\"_blank\" rel=\"noopener noreferrer\">UCHealth Yampa Valley Medical Center<\/a>, gives her tips for cooking healthfully while camping, below.<\/p>\n<h3><strong>Be prepared with food ideas<\/strong><\/h3>\n<p>If you have time before you leave, do some prep-work: wash produce, cook meat and consider making a pot of chili or a stir fry so you can bring a dinner-sized portion in a reusable container.<\/p>\n<p>To keep things simple, Marrs likes to bring camping foods that mix well together. For instance, salsa, avocado and saut\u00e9ed veggies can go into a skillet dinner or a breakfast burrito.<\/p>\n<p>Even if you don\u2019t have time for prep-work, think through the healthy camping meals you plan to make.<\/p>\n<p>\u201cHave an idea or list to bring into the grocery store so you aren\u2019t overwhelmed and can shop quickly and efficiently,\u201d Marrs said. \u201cThe main thing is to have some ideas for what you\u2019ll eat before you go. It\u2019s not fun when you\u2019re hungry and tired, and the sun\u2019s going down, and you haven\u2019t thought of dinner.\u201d<\/p>\n<h3><strong>Make a hearty salad<\/strong><\/h3>\n<p>A big bowl of <a href=\"https:\/\/cookieandkate.com\/best-quinoa-salad-recipe\/\" target=\"_blank\" rel=\"noopener noreferrer\">quinoa salad<\/a> with chopped vegetables that stay firm, such as kale, celery and cucumbers, along with pumpkin seeds, herbs and a simple dressing of olive oil and lemon juice, serves as an easy snack or a base for a meal.<\/p>\n<p>\u201cYou can add in beans or cooked chicken and top it with avocado for dinner, or eat it with chips or rice crackers for a snack,\u201d Marrs said.<\/p>\n<h3><strong>Try foil packets<\/strong><\/h3>\n<p>For an easy way to individualize healthy camping meals and minimize cleanup, try the ever-popular foil pack.<\/p>\n<p>Add a protein such as black beans, tofu or cooked meat to a foil pouch, then add veggies, seasonings and a little olive oil or lemon juice. Seal the foil and cook it on a grill or on a grate over the fire. After 15 to 20 minutes, dinner is served.<\/p>\n<p>\u201cYou open those up and everything is cooked and flavorful,\u201d Marrs said.<\/p>\n<p>Try taco meat, beans, peppers and onions for a Mexican flair, or mix cooked ground turkey with diced sweet potatoes, peppers, onions and cheese for filling comfort camping food. Salsa, avocado and other condiments can be added after the foil packs have cooked.<\/p>\n<p>\u201cIt\u2019s kind of like making a soup \u2013 it doesn\u2019t matter what it looks like,\u201d Marrs said.<\/p>\n<h3><strong>Keep breakfast and lunch easy<\/strong><\/h3>\n<p>A camping breakfast can be as simple as granola, yogurt and fruit (you can premake in a mason jar). Or fill a tortilla with scrambled eggs, potatoes you have seasoned and cooked at home, salsa, avocado and leftover saut\u00e9ed vegetables for a breakfast burrito.<\/p>\n<p>For a lunch on the go, try a peanut butter and jelly sandwich, a packet of tuna and crackers, or hummus with carrots and celery.<\/p>\n<p>Trail mix, dried fruit and individual packs of nut butters and applesauce make for easy snacks. Or try one of Marrs\u2019 favorites: a date stuffed with a nut or nut butter.<\/p>\n<p>\u201cBring easy-to-grab snacks \u2013 rice crackers and tortilla chips to dip in hummus, cheese sticks, apples,\u201d Marrs said. \u201cIf you don\u2019t have something planned, more likely to reach for less healthy options.\u201d<\/p>\n<h3><strong>Don\u2019t forget dessert<\/strong><\/h3>\n<p>\u201cYou have to have s\u2019mores,\u201d Marrs said. \u201cBut you can buy natural marshmallows, different kinds of chocolate and gluten-free graham crackers so they work for everyone.\u201d<\/p>\n<p>For the non-chocolate lover, try a foil-pack crumble made with granola and berries.<\/p>\n<p>With a little attention to what you\u2019re going to eat, you\u2019ll elevate your camping trip to the next level.<\/p>\n<p>\u201cCamping is an important activity right now.
