Photo by Getty Images.<\/figcaption><\/figure>\n<p>From juicy peaches and colorful berries, to tangy arugula and sweet corn, summer is a great time to add freshness to your diet with seasonal fruits and vegetables.<\/p>\n<p>To maximum nutrients and flavor, shop locally by heading to your farmer\u2019s market or local food cooperatives, such as the <a href=\"https:\/\/communityagalliance.org\/\" target=\"_blank\" rel=\"noopener noreferrer\">Community Agriculture Alliance<\/a> in Steamboat Springs.<\/p>\n<p>\u201cLocal foods come so quickly from the farm to the table, and they are filled with more <a href=\"https:\/\/www.healthline.com\/health\/phytonutrients\" target=\"_blank\" rel=\"noopener noreferrer\">phytonutrients<\/a> and enzymes, which make them good for your health and easier to digest,\u201d said Laura Stout, a registered dietitian nutritionist at <a href=\"https:\/\/www.uchealth.org\/locations\/uchealth-yampa-valley-medical-center\/\" target=\"_blank\" rel=\"noopener noreferrer\">UCHealth Yampa Valley Medical Center<\/a>.<\/p>\n<p>In <strong>June<\/strong> in <a href=\"https:\/\/www.mainstreetsteamboat.com\/farmers-market\/\" target=\"_blank\" rel=\"noopener noreferrer\">Steamboat Springs<\/a>, local gardeners may just be putting seeds into the ground. But around Colorado, many vegetables are ready to go, including arugula, lettuce, spinach, pea greens, asparagus, green onions, fennel, radishes, new potatoes, mint, basil, cilantro and rhubarb. For fruits, expect to see blueberries, strawberries and cherries.<\/p>\n<p>And don\u2019t forget the <a href=\"https:\/\/www.healthline.com\/nutrition\/microgreens\" target=\"_blank\" rel=\"noopener noreferrer\">microgreens<\/a>.<\/p>\n<div class=\"su-callout-box col-xs-6 col-sm-6 right\" style=\"background-color:#dce4e7; color:#2e3b44;\">\n<p><strong>Build a \u201cBowl Meal\u201d<\/strong><\/p>\n<p><em>The versatile \u201cbowl meal\u201d can be made with any veggies and grains you have on hand, and makes for a healthy breakfast, lunch or dinner.<\/em><\/p>\n<ul>\n<li>Add a heaping portion of massaged kale or fresh spinach to your bowl.<\/li>\n<li>Layer in roasted new potatoes and fresh corn (or whatever was for last night\u2019s dinner).<\/li>\n<li>Toss in chopped green onions, grilled fennel and avocado.<\/li>\n<li>Top with a fried or poached egg.<\/li>\n<li>Garnish with a pile of red radish microgreens (any microgreens will do).<\/li>\n<li>Sprinkle with a good quality olive oil and a touch of vinegar.<\/li>\n<\/ul>\n<p><strong>Seasonal Fruit Salads<\/strong><\/p>\n<p><em>For a bright and colorful side dish, look no further than a simple fruit salad.<\/em><\/p>\n<ul>\n<li>August melon fruit salad: Mix cubes of cantaloupe, honeydew and watermelon. Add blueberries or blackberries for extra color.<\/li>\n<li>Peach berry fruit salad: Slice fresh peaches and add your favorite berries. This fruit salad also makes a great filling for a pie or cobbler.<\/li>\n<\/ul>\n<\/div>\n<p>\u201cI love microgreens,\u201d Stout said. \u201cThey\u2019re great for garnishing any plate \u2013 you can put them on your eggs or add them to your salads.\u201d<\/p>\n<p>By <strong>July<\/strong>, look for Colorado kale, beets, broccoli, celery, chard, corn, cucumbers, potatoes and cherry tomatoes.<\/p>\n<p>And in <strong>August<\/strong>, get ready for the fruits. \u201cAugust is a big fruit month,\u201d Stout said. \u201cThe vegetables come in first, but by August, you really start to get fruits.\u201d<\/p>\n<p>Seasonal fruits include apples, apricots, blackberries, cantaloupe, melons, peaches, nectarines and raspberries. Also keep an eye out for tomatoes, zucchini, Vidalia onions and squash blossoms.<\/p>\n<p>\u201cSquash blossoms are becoming more popular,\u201d Stout said. \u201cThere\u2019s a lot you can do with them, from stuffing and quickly frying them, to baking them alongside chicken.\u201d<\/p>\n<p>And if you find yourself with an extra helping of zucchini, use a vegetable peeler or spiralizer to turn the zucchini into long, pasta-like strips. Steam the veggie noodles, then use them in place of pasta or add them to a salad for a powerful vegetable punch.<\/p>\n<p>Once the weather cools in <strong>September and October<\/strong>, expect pears, pumpkins, winter squash, watermelons, rutabaga and turnips.<\/p>\n<p>But when the summer heat is still here in full force, give outdoor cooking a try.<\/p>\n<p>\u201cDon\u2019t be afraid of doing your whole meal on the grill,\u201d Stout said. \u201cFrom pizza to veggies, you can put anything on a grill.\u201d<\/p>\n<p>Use a cast-iron pan for items that are diced into smaller pieces. And don\u2019t shy away from grilling fruit.<\/p>\n<p>\u201cGrill cantaloupe and melon with a nice balsamic vinegar glaze, or cut peaches and nectarines into rounds or quarters and grill them,\u201d Stout said. \u201cGrilled fruit on top of ice cream is lovely.\u201d<\/p>\n<p>When adding produce to your diet, remember that variety is good.<\/p>\n<p>\u201cAll of these fruits and vegetables have different phytonutrients and vitamins and minerals,\u201d Stout said. \u201cThey all bring us something different in terms of good nutrition.\u201d<\/p>\n<p>&nbsp;<\/p>\n<p>This article first appeared in the Steamboat Pilot &amp; Today on June 24, 2019.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>From juicy peaches and colorful berries, to tangy arugula and sweet corn, summer is a great time to add freshness to your diet with seasonal fruits and vegetables.
