It’s time to bring it back to our own kitchens and cook it the way other cultures do. It’s truly as American as, well, pumpkin pie.

What are the best types of pumpkins for cooking?

This month’s very straightforward recipe is for pumpkin fries, baked in the oven rather than in a deep-fat fryer. I found it among dozens of recipes using pumpkin meat, both in cookbooks and online.

Cooking pumpkins, also called pie or sugar pumpkins, are generally better for cooking than the ubiquitous jack-o’-lantern or carving pumpkin. Cooking pumpkins are thick-walled, with more flesh that ranges from light to deep orange or orange-red. Carving pumpkins are relatively thin-walled, making them easier to clean out and carve, but their flesh is neither as flavorful nor as plentiful.

And what killer names they have: Jarrahdale, Tiger Stripes, Cheese Wheel, Red Warty Thing, Knucklehead, Fairytale, Porcelain Doll and the Cinderella or Rouge Vif d’Etampes, an heirloom French variety.

You can prepare pumpkin meat just as you cook other squashes: whole roasted; cut into large or small sections that are then boiled, steamed or roasted; or even microwaved.

Tastes and textures will vary too. The cooked flesh of a Jarrahdale, for example, isn’t stringy like carving pumpkin flesh and tastes slightly nutty (cashew-like) with a cucumber-like aroma. A Cinderella, on the other hand, is stringier and less sweet than a Jarrahdale and very yam-like when cooked.

When roasting a whole pumpkin, be sure to incise the walls in several places with a thin, sharp knife or long-tined sharp fork. You don’t want the pumpkin to explode in the oven because of pent-up steam.

Sure, the orange or carving pumpkin is everywhere to be found, especially at this time of year. And while you can use it for cooking, its flesh is neither flavorful nor plentiful. More and more grocery stores sell other cooking pumpkins, especially Cinderella and Jarrahdale.

How to make savory oven-baked pumpkin fries

Pumpkins are great for much more jack-o’-lanterns and pie. Arrange the fries in a single layer on a parchment-lined baking sheet. Bake for 30 minutes or until cooked through, turning once if desired. Note: The fries may not be crisp-skinned, depending on the initial moisture level of the pumpkin. Bill's experience also includes teaching at Regis University and the University of Chicago and in classrooms of his own devising; working as on-air talent with Denver's KCNC-TV, where he scripted and presented a travel & lifestyle program called "Wine at 45"; a one-week stint as a Trappist monk; and offering his shoulder as a headrest for Julia Child for 20 minutes.
